Vanilla and Berry Muffins

  • ½ cup of applesauce (optional)
  • ½ cup of coconut oil
  • 2 eggs
  • ½ cup BNI Vanilla / Raspberry Whey Iso
  • 1 ½ cup of oatmeal
  • ¼ cup of stevia
  • ½ tsp. baking powder
  • ½ teaspoon of baking soda
  • 1 cup of berries
  • Preheat the oven to 375 degrees. Combine the wet ingredients (oil, eggs and applesauce) in a bowl. Then mix the dry ingredients and incorporate everything.

Bake for 20-25 minutes and check if it’s baked through by inserting a toothpick into the muffin (if it comes out clean, they’re done)!!
