- ½ cup of applesauce (optional)
- ½ cup of coconut oil
- 2 eggs
- ½ cup BNI Vanilla / Raspberry Whey Iso
- 1 ½ cup of oatmeal
- ¼ cup of stevia
- ½ tsp. baking powder
- ½ teaspoon of baking soda
- 1 cup of berries
- Preheat the oven to 375 degrees. Combine the wet ingredients (oil, eggs and applesauce) in a bowl. Then mix the dry ingredients and incorporate everything.
Bake for 20-25 minutes and check if it’s baked through by inserting a toothpick into the muffin (if it comes out clean, they’re done)!!
